Bulk Farm Pork

Ready to stock your freezer with fresh-from-the-farm pork? We have a limited number of custom processed whole and half hogs available. You pay the farm for the pig, based on the hang weight, and you pay the butcher directly for processing. We'll walk you through ordering, so you'll be confident you'll get your favorite cuts of pork. How much meat do you get from a whole hog?

A whole hog yields 150-180lb of commercial cuts. This is similar to purchasing a 1/2 beef share. The final amount will depend on what cuts you order, and if you keep the lard and organ meat. 

A 7cubic foot deep freezer like this will easily hold a whole hog. 

What pork cuts do you get?

When we first started filling out cut sheets from the butcher, I was completely overwhelmed. There were SO many options! We actually processed two pigs ourselves on the farm, so we could have hands-on experience on where each cut comes from.

After the pig is cleaned, it is cut in two identical halves.  Each half is divided into four primal cuts: Leg, Shoulder, Loin, and Belly. The pork cuts you know and love come from each of these primal cuts. As much as we would love to turn the whole pig into bacon - it just doesn't work like that!

Bulk Farm Pasture Pork

The ham and hock come from the bag leg of the pig. The ham you usually see is a ham half, so there are four available per pig. You can also have the ham cut into 1/2" ham steaks for a quick meal. Ham not your thing? You can grind it for additional sausage. Ham is usually smoked and cured.

Sausage

After all of your commercial cuts are made, the remaining trim is combined to make ground pork. Our butcher has a wide selection of sausage to choose from, and we have loved everything we have tried! Each sausage flavor has a 10lb minimum. If you don't grind any cuts for additional sausage, you'll get 2-3 flavors per whole hog.

Natural cure is available with the jalapeno, German and Italian smoked sausage.
